Our honey cake — Medovik — is twelve paper-thin layers, made over 24 hours. That time is the whole secret: it lets the layers soften into each other until a fork goes through like it's not even there. Gentle honey, a cream that isn't too sweet, and that texture nobody quite expects the first time.

It's addictive — we don't say that lightly. It's the cake that gets photographed before it gets eaten, and the one people come back for by name.

Medovik is rich — slices are cut generously and go further than you'd think.
